We use a living starter our grandfather cultured over thirty years ago, feeding it daily with organic rye and stoneground wheat.<\/p>\n\n\n\nNo commercial yeast \u2014 naturally leavened and easier to digest\n\n\nCold-fermented for 18\u201324 hours to develop deep, complex flavour\n\n\nBaked on a stone hearth for a crackling crust and open, tender crumb\n\n\n\n\n\n\n\n\n\n\n\n\n\n<h2>Baked before the sun comes up<\/h2>\n\n\n<p>Every loaf, pastry, and roll is made by hand in small batches. Here&#8217;s what&#8217;s waiting for you each morning.<\/p>\n\n\n\n\nOur signature loaf. A tangy, open-crumbed round with a deep mahogany crust and a chewy, tender crumb.\n\n\n\n\nDense, nutty, and studded with sunflower, flax, and caraway. Built for thick toast and salted butter.\n\n\n\n\nButter croissants, pain au chocolat, and seasonal fruit danishes, laminated by hand the night before.\n\n\n\n\n\n\nYou can taste the time in it. There&#8217;s a nuttiness and a tang that only comes from a living culture \u2014 you can&#8217;t rush it.\n\n\n\n\n\n\n<h2>From starter to crust<\/h2>\n\n\n<p>Every loaf takes nearly two days from the first fold to the cooling rack.<\/p>\n\n\n\n\n<p>01<\/p>\n\n\n<h3>Feed the starter<\/h3>\n\n\n<p>We feed our 35-year-old mother culture with organic flour and filtered water at dawn, every single day.<\/p>\n\n\n\n\n<p>02<\/p>\n\n\n<h3>Mix &#038; fold<\/h3>\n\n\n<p>Just flour, water, salt, and starter. Four gentle folds over three hours to build strength without tearing.<\/p>\n\n\n\n\n<p>03<\/p>\n\n\n<h3>Cold ferment<\/h3>\n\n\n<p>The dough rests overnight at a cool temperature, slowly developing its signature tang and depth.<\/p>\n\n\n\n\n<p>04<\/p>\n\n\n<h3>Bake &#038; crackle<\/h3>\n\n\n<p>Into the stone hearth at 250\u00b0C. Steam, heat, and a watchful eye for 45 minutes until the crust sings.<\/p>\n\n\n\n\n\n\n<h2>Three generations, one passion<\/h2>\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n<h2>What the neighbourhood says<\/h2>\n\n\n\n\nI&#8217;ve been coming here every Saturday for six years. The seeded rye is the best bread I&#8217;ve ever eaten \u2014 and I&#8217;ve eaten a lot of bread.\n\n\n\n\nMy kids won&#8217;t eat supermarket bread anymore. We come in on Sunday mornings and the smell alone is worth the trip.\n\n\n\n\nAs a chef, I&#8217;m picky about my ingredients.
